What about ketchup?

 

We're not talking about steak here, buddy. We're talking about brisket. The ONLY real bbq.

Well, now, seein' as I'm a local with respect to both Southeastern barbecue AND Texas barbecue, you're both wrong and you're right. Smoked pork, done properly, is barbecue. And brisket is real good.

 

All I'm sayin is if you put ketchup on a good steak, sauce on good bbq should also be acceptable.

 

Only if you cook it beyond recognition.

 

Steak is just meat. Brisket is bovine ambrosia. And I do, on occasion, add a dash of the sauce to good bbq. Never to GREAT bbq.

I can smoke pork so good it'll make you cry. All I've ever been able to do with brisket is make tender jerky.
