SJ Homemade Recipe Thread

    So @QYFW mentioning hamburger and corn on potatoes in the guilty pleasure food thread made me think that we haven't ever had a thread with recipes (that I can find or recall off hand).

    So, I'd love to see what you make as a staple that maybe you would like to share with the class.
    I'll start with two that my wife and I love for dinner (and just had this past week):
    Chicken Spaghetti Bake & Greek Nachos

    Chicken Spaghetti Bake:
    • 2 cups of chopped/pulled rotisserie chicken
    • 1 box of spaghetti, plus a cup or so of the reserved water
    • 2 1/2 cups shredded sharp Cheddar
    • half a diced green and half a diced red pepper
    • 1 teaspoon seasoned salt
    • 1/8 to 1/4 teaspoon cayenne pepper or ground red pepper
    • 2 cans of cream of mushroom soup
    • half of a white or yellow onion, chopped
    • salt/pepper to taste
    Set oven for 350
    Make the spaghetti, leave the water behind
    mix everything together except 1/2 cup of cheese. Add reserved water to help wet consistency
    Pour into a 9x13 cake pan (or casserole dish), add final 1/2 cup of cheese to the top.
    cover with foil and put in oven for 45 minutes, take foil off in final 5-7 minutes (or broil for 2 minutes if you like the top crispy)

    Greek Nachos:
    • 6 pitas
    • 1 pound of lamb
    • 1 tablespoon of Mediterranean spices (I make mine with 3 tablespoons dried rosemary, 2 tablespoons ground cumin, 2 tablespoons ground coriander, 1 tablespoon dried oregano and ½ teaspoon salt and mix together)
    • 1 small container of Feta
    • 1 container of hummus (or make your own)
    • 1/2 can chopped olives (we use black)
    • 2 Roma tomatoes, chopped
    • half a red onion, chopped
    Set oven for 400
    Brown lamb, drain grease into bowl, mix with spices and put aside
    Cut pita shells into triangles
    arrange pita triangles on a baking sheet, coat both sides with grease from cooked lamb
    roast pita in oven for 5-7 minutes, until pita is crispy
    when pita is crisp, take out and put aside
    take a 9x9 baking dish and layer lamb meat, hummus, olives, onion and tomatoes (we usually half each and layer twice)

    Put in oven for about 7-10 minutes, just to heat everything together
    Serve with pita chips and tzatziki or Greek yougurt​

    Pasties. But I think my Mummo (Finnish for Grandma) would come back from her grave if I passed that recipe along in mixed company. ;)

    I don't have one but my sister and my friend Kevin have them and LOVE them. Both of them joined groups on Facebook and found millions of recipes that way.

    I think I've perfected grilled (or pan seared) chicken breasts by marinating them overnight in olive oil, soy sauce, a little bit of Worcestershire sauce, salt, and pepper. Comes out juicy and flavourful every time.

    Can't say I authored this, but we swear by it. You can replace the crawfish with shrimp or langostinos if you prefer. The "sauce" is outstanding.

    Yeah, we talked to my mom last night, and she had just read an article about that.

    My wife just got home from work and says our model wasn't recalled.

    She likes it so far. Will have to see if it's the kind of thing we (she) will continue to use, or if we'll get bored of it.

    A quickie dinner that I like pulling out every couple of weeks is the impromptu Philly cheesesteak.

    For one person, put four Steak-Ums in a pre-heated skillet over medium. Add four slices of white American, a 1/4 cup of onions or shallots and spices if you like (oregano, garlic powder, basil). Chop it up with a metal spatula until it's all blended into one gooey mess, making sure the Steak-Ums are well-browned. That makes two delicious sandwiches.

    I think I have my dinner for tonight planned out.
