    Coming from German stock who were butchers, all my relatives would grab globs of raw hamburger and snack on it before we’d make patties to grill.

    I love rare steak, sushi and steak tartare...but that’s a step too far for me.

    I visited a “sausage hotel” near Nuremberg last year, basically a hotel very heavily themed about sausage.

    Part of the deal was making sausage, basically starting from a recently killed pig. They had us eat this kind of “sandwich” as we went. We dipped a glob of freshly ground sausage in onions.

    It was delicious.
