Your hamburger

    I can't cook a hamburger to save my life. My mother cooked them rare and I couldn't stand the soft, red center. I can't get them cooked through without charring them. I prefer turkey burgers.

    The depression in the middle is a good trick.

    You can also turn the heat down, cook then lower and slower.

    Turkey burgers are really good. Wife and I do those regularly.

    I like how turkey burgers can take on seasoning. I add everything to them.

    Love turkey burgers - have an Asian-style recipe for them that includes applesauce, ginger, soy sauce and hoisin that makes it ridiculously juicy and flavorful.

    Adding whatever hot sauce and some soy sauce makes them seem to cook better.

    If you have a grill with an upper rack, you can easily use a digital / probe thermometer with them. I use them for my turkey burgers all the time, since its very easy to dry them out, if you go too long.

    I want a By God American Cheeseburger the way the Founding Fathers grilled them on their Weber Kettle in Philadelphia on July 4, 1776 not something you have to describe and eat with a fork, nancy boy!

    ASIAN TURKEY BURGERS
    2 lb. lean ground turkey
    1/3 c. applesauce
    3 T. hoisin sauce
    1 T. soy sauce
    1 T. sesame oil, plus additional for pan
    1 T. finely minced ginger root
    2 cloves garlic, minced
    3 scallions (white and green parts), finely Chopped
    Salt and freshly ground black pepper, to taste
    6 sesame seed hamburger buns

    * In large bowl, combine ingredients and form into 6 patties. May appear a little wet/loose, but that's normal. May be covered and refrigerated up to 24 hours.
    * Lightly brush a grill pan, skillet or hot grill grates with remaining sesame oil and place over medium-high heat. Add patties and cook until golden, about 4 minutes. Flip and cook until the other side is golden and turkey is cooked through, about 5 minutes. Transfer to a bun and serve immediately.
    * Serve with peanut sauce, lettuce and onions and a dollop of hoisin sauce, or with lettuce, tomato and mayo.
