    What's everyone making for the holiday? I did brisket overnight and now I've cut the burnt ends have them back out to smoke.

    Basic ribeyes, after allowing to reach room temp with sea salt and pepper. Roasted mushrooms and bell peppers in olive oil.

    Juicy Lucys ... cheese inside the burger ... hot dogs and sweet corn on the grill. Copious amounts of beer, too, but we won't grill that.

    Burgers with onions, mushrooms and cheddar mixed into the ground beef tonight. BBQ ribs tomorrow.

    Lots of cold beer.

    Okay, guys, help me out, please and thank you.

    I'm learning how to cook for myself. I bought a new grill, a nice one. It's gas.

    Twice now I've tried to grill a steak on it. First time was tenderloin, tonight was striploin.

    I like my steaks bloody in the middle, but with a little bit of char on the outside.

    Super hot flame for a short period of time, right?

    Both times I've felt like the outside was underdone for me, and the middle was overdone.

    Help?
