Best burger you've ever had.

    A place called Swine in the West Village of NYC makes a bone marrow & brisket burger that is out of this world.

    Went there my then-girlfriend (now my wife) sometime during the first year it was open. I was on the fence with that or something else (don't remember what) and decided, "Ya know what? When's the next time I'm going to get a chance to try a bone marrow burger?" So glad I decided to try it. Best burger I've ever had.

    Smart. My friend had it and loved it. I went with pulled pork, which was fantastic. Other time my wife and I just stopped in for a drink and a nosh. Gotta make it a point to get back there soon!

    OK. So someone is going to have to sell me on bone marrow.
    What's it taste like?......What's the texture?.......How do I know if the bone marrow that I'm eating (I can't believe I just typed that) is good, bad, poorly cooked?.......
    Sell me.

    Chef, it's like gooier but meatier tasting fat. It's essence of the meat. Lamb marrow, which you can get if you buy the right kind of lamb chop, is the best of all. I wouldn't eat it on a daily or even weekly basis because it surely isn't healthy, but it is a delicious treat.

    A little while ago I ate at a restaurant called the Copper Onion in Salt Lake City. My friend and I got the bone marrow for the appetizer. I'd never eaten it before.

    Three bones arrive, sawed in half lengthwise. Just fucking bones. A little spoon, some coarse salt, and some toasted bread.

    Sprinkle on the salt. Spoon it onto bread.

    One of the best things I've eaten in my entire life.
