Even though there are Cousins sub joints in states other than Wisconsin, the only place they consistently stay open is in Wisconsin, and mainly, SE Wisconsin at that.

If you're in Bethlehem, you need to go to the Goosey Gander for a good sandwich.

In the DC area, Ledo's Pizza is super duper fantastic.

I've always heard good things about Ledo's. It's on the list.

To whoever mentioned kolachies made with *heresy!* sausage - they might be called kolachies, but they aren't authentic.

Authentic kolachies are made with poppy seed, apricot or plum.

So says Czech Rosie who learned the fine art of kolachy-making as a child from her Czech-speaking grandmother. (I just wish I remembered more than a few phrases of Czech that she taught me during those baking sessions.)

My grandma still makes plum and apricot every year. Won't be long until Thanksgiving.

Agreed. I moved from MN to Houston about two years ago now and there is not a single real kolache to be found, only the sausage filled impostors.

Poutine. French fries with gravy and cheese curds. Used to be a Quebec-only snack but now it's all over the country. Hell, even Harvey's, a fast food hamburger chain, sells it.

Now we have gourmet poutine with beef short ribs and/or foie gras.

Is something wrong with me for being a Pittsburgh native who doesn't like Primanti's? I don't really like most of the Western PA stuff that has been mentioned on this thread. The only must-have for me when I visit is Mineo's.

Tillamook Wild Mountain Blackberry ice cream and Burgerville Marionberry shakes. A rite of summer in my neck of the woods.

And Sahlen's hot dogs are awesome, as were Malecki and Shelly (don't ask me to spell Shellengowski correctly) brand meats. I think they sold Sahlen's at Ted's red/white hots.

And a beef on weck anywhere outside of WNY isn't authentic.

As a recent arrival to your region, may I second the Tillamook ice cream. Their Huckleberry flavor also is great stuff.
