They do tornado assessments afterward by examining damage. Those storms are so quick and volatile that it's difficult to get an accurate read on exactly how fast the winds are as they're happening.
But it does still speak to your larger point that the survey teams' conclusions are still very educated estimates. And that's why anyone who claims they can say with certainty that this was the hottest week ever in earth's history is a fool. They are making an educated guess at best, on a topic that has plenty of margin for error.

    I don't like damned hurricanes.
I don't like their driving rains.

    I can take a small Cat 1.
Shagging in them is sometimes fun.

    If it's a 2, we'll drink some beer.
Hoping that that it don't come near.

    I don't like a big Cat 3.
I wish they'd stay far out to sea.

    I really hate those 4s and 5s.
The claim too many good folks' lives.

    I don't like damned hurricanes.
    They're no good, only pains.

It's gonna be so bad in the Gulf of Mexico this fall that people will get out of the water to cool off.

    If man is five
    Then the devil is six
And if the devil is six
    Then God is seven

Anyone who leaves off the “recorded” part is the fool. It’s recorded history. And we know because of temperature data which is actually not hard to get.

We just can’t go back beyond a certain point because there just weren’t enough measuring stations to draw accurate conclusions. But shortly before the end of the 19th century we were at that point and information is actually very reliable.

Man, it was a freaking bathtub down there two weeks ago. The sheriff said the heat and warm water may have played a role in Ryan Mallett’s death at Destin.
