That's a great dinner. Like to hit it on my way to the slopes.

There has to be a way to estimate the misinformation factor.
If somebody claims to be vegan but later admits to eating salmon and egg-white omelets, the truth is probably closer to bacon cheeseburger five time s a week.

If the salmon is farm raised it's ok. It's a loophole in the vegetarian playbook

    I actually love zucchini. It's a top-three vegetable.

I make the dip - it's to kill for. Zucchini... you can grate, saute and chop those M'F'ers. It becomes a beautiful base for a luscious 'creamy' dip. Add a little onion, tablespoon of Veganase, dash or 3 of cayenne pepper, few bread crumbs. Salt, pepper, stir. People will RAVE.

I dunno if it is a top three vegetable, but zucchini has been fresh at a local farmer's market for the last few weeks, and we keep buying them. Last week, I sliced them about an inch thick lengthwise, along with some Italian peppers and some yellow squash, let everything marinate overnight in a bag with some olive oil and balsamic, and then crunched them in between an old George Forman grill we have been using a bit more lately. I then threw them in between two slices of home made wheat bread and tossed that on the grill to get everything a little toasty. It ended up being a pretty good meal.

Zucchini, squash, onions, peppers, garlic and some butter.....wrap all that up in aluminum foil packets, throw it on the grill for 20 minutes. Fantastic.
