Do Vegetarians and Vegans Think They Are Better Than Everyone Else?

    If Sonner were to cook that all up and then mix it in with pasta as the main dish, would you eat it, 93?

    Maybe so, but it being vegan never enters my mind when I make that. The butter simply makes it taste better. Not every dinner in my house involves the traditional courses or foods or whatever. Sometimes, we'll do grilled veggies only. Other times, like last night, we did baked potatoes with pork bbq on top. And other times, we'll do the whole "salad then meat and veggies, then dessert" if we feel up to it. All depends.

    I like how at the meat counter at Whole Foods they highlight the fact that all their beef is grass fed.

    A go to for us is zucchini or squash, red onions, red peppers and some portabellas. Olive oil drizzled on and everything broiled or grilled. Then we let it cool down and put it over some red leaf lettuce and dress with balsamic. It is one of our go-to's. ... Easy to do if you prepare the veggies and let them sit in the fridge.

    Another standard zucchini thing for us is ratatouille, which really is a traditional peasant food, so you can throw in any vegetables you want in. But we usually do something like eggplant, zucchini, diced red peppers, whole shallots, crimini mushrooms, cherry tomatoes (which get soft and explode in your mouth when you eat it), chopped up garlic sprinkled in, fresh cilantro and coriander (a lot of each), salt and pepper and olive oil. Can eat just like that after cooking or serve over rice.

    Not vegan, but another "different" zucchini thing we do is a greek dish -- You saute some onions till they are soft, then add green beans trimmed and cut in half to the pan for a few minutes with some cayenne pepper. Then add zucchini, small red potatoes, chopped parsely and fresh oregano (dried if we don't have any fresh). Let that go for a few minutes and then pour a few cups of crushed / chopped tomatoes over the mixture and let the liquid soak in. Lower the heat and let it simmer for a half hour to an hour -- till potatoes are cooked well. Then serve with feta cheese sprinkled on top (which works really well to cut the cayenne pepper) and a crusty baguette to mop up.
