There used to be a place in Montreal called "La Parise" that served fresh frites with homemade mayo. The mayo was served in a small dish that had a dollop of Dijon mustard that worked through the mayo as you dipped. Absolute perfection.

My latest catch-all sauce has become horseradish mixed with honey mustard. Good on everything.

There's a local company that makes a mustard with horseradish. Perfect next to my Sunday dinner steak

Goyim but yeah. Growing up we put mayo in tuna and chicken salad. Russian dressing on roast beef and turkey. Mustard on corned beef, pastrami, salami and ham sandwiches. Russian is ok on corned beef.
Mustard on knishes. Ketchup on fries. Vinegar with fries.
Oil&vinegar on Italian heroes and subs.
    Ketchup on meatloaf sandwiches.
    Hotdogs get mustard.

    Never yellow mustard. Brown mustard.

Most moderate and especially high-end restaurants refer to them as frites. If I have come across that often, it's pretty common.
