Food/restaurant rant

    What if you took chicken thighs and smoked half of them.
    Pull all the meat off and make balls of smoked thigh meat, cooked/crumbled bacon and Gouda.
    Take the skins from the leftover, uncooked thighs, and wrap those skins around the smoked chicken-bacon Gouda balls.
    Then deep fry until the chicken skins are crispy.

    The contest is Sunday. I'm going to make Jewish Pigskins ...

    * Chicken skins as the first layer (thus fulfilling the chicken requirement)
    * Bacon as the second layer
    * Mashed charoset (part of the Seder plate) for the filling ... I'll make it with apples, walnuts, cinnamon

    Roll them and fry in peanut oil. Haven't thought of a dipping sauce yet. Any suggestions?

    If you've got apples, walnuts and cinnamon in there plus bacon, the dipping sauce pretty much has to be on the blander side, with a mayonnaise or yogurt base, I'd think. You've already got salty, sweet and a hint of spicy in the things.
