    A little extravagant, but for New Years dinner bought two dry aged ribeyes for my son and me; never had before, WOW, what flavor! Best I’ve ever tasted.

    That dry aged beef is so rich in flavor. I had the ribeye at our best steakhouse a couple of years ago, and it was great but almost too much.

    Late to the thread. No suggestions for Louisville, sorry, but I discovered the joy of sauteeing onions in a microwave after trying it in a skillet for eons. Comparable to DJTJ discovering cocaine. An epiphany.

    When you realize you're out of American cheese after making instant mashed potatoes in the microwave ... mixing in Cheese Puffs is an excellent alternative.

    Got the turkey in the fridge today. We're headed to New Orleans for Thanksgiving, but I'll spatchcock and inject it with a DIY creole butter knockoff, then hit it with some cajun spices and throw it on the smoker.

    Anybody had Zab's Hot Sauce? It is really good. Great flavor with spiceines.

    I opened a bottle of Frank's and I couldn't get over how much more flavor it had than an old bottle.

    We're doing a Popeye's Cajun turkey again this year. Don't laugh! It's really damn good (and costs $100).

    All sides will be done by family members, though I am hoping we get some of those Popeye's biscuits.

    My mom late in her life discovered ordering a Cracker Barrel turkey was so much easier. The last turkey she cooked put the Atacama Desert to shame.

    My sister will one day come to the same conclusion.

    Brine for one day…
    400 for one hour then 180 for about one hour for every two pounds of the bird. (Get a digital thermometer)

    Harder to predict when done but it will be the best turkey you’ve ever had.
