    Not every part of the cow is the same. When you are dealing with butter soft steaks with just the right amount of fat, you don't cook the flavor out.

    I never, ever, want to see any hint of red/pink in any meat dish I am served. You can munch on carcasses as you see fit. Hell, bite a live cow on the ass if so moved!
