This is what I fear will happen.

Two teams will finish the regular season undefeated. One will be from the Big 12 and the other will be Penn State.

BCS title game will be the Big 12 champ against a SEC team with one loss.

Not sure how that happens. We're only in week two of the BCS poll and Penn State is within .0242 of Alabama and number 2. If Alabama loses to Mississippi State, LSU, or Auburn and Penn State stays undefeated, Penn State is going to leapfrog Alabama.

If Alabama loses to any of those teams I think Florida, USC, Oklahoma and more will pass them.

If Penn State runs the table it will be in the championship game.

People rip on the Pac-10, but they play everybody. They don't need a conference championship.
SEC schools have been getting fat and happy over four non-conference rent-a-wins. Pick up two conference wins and they make a bowl.
I'm about to lose my SEC fanboi status, but the SEC has been vastly overrated for the last few years.
A couple of good teams and everyone else is just beating each other up.

Tech is well-known for looking completely clueless offensively in at least one game a year, and usually it's a big game like this one, so yeah, I could see Tech getting stomped by Texas based on that history.

However, UT's defense has some serious issues that have been masked by its offensive successes the last few weeks. OU moved the ball on them and OSU marched up and down the field most of the day on Saturday. And given that UT's three big games this year have either been at a neutral site (OU) or at home (Mizzou, OSU) they could be ripe for an upset here.
