On a side note, the wife and I had Chinese last week and there were ads on the back of our fortunes

I've watched McDonald's employees play hockey with the frozen buns before. It's not just a Chinese buffet issue.

I just accept that my food at a restaurant has probably been touched by unwashed hands, perhaps spit on if I've been an asshole to the waiter and likely isn't cooked using the freshest possible ingredients. I'm not saying it's right, but I accept it. We've evolved surprisingly resilient digestive systems over hundreds of thousands of years and I'm pretty sure pre-historic man didn't wash his hands before digging in to eat that mammoth meat or those bugs he had to consume to stay alive.
