    Graham Elliot is the chef/owner of the Michelin starred restaurant Graham Elliot as well as the culinary director for Lollapalooza and a judge on FOX's MasterChef.

    What was his big idea for a new business venture?

    You guessed it -- a sandwich shop.

    It's a shame he never visited SportsJournalists.com. Someone would have set him straight and let him know that there's no way to make money with a sandwich shop.

    His place is just a couple of blocks away from Rick (brother of Skip) Bayless's latest concept Xoco. Bayless, also a Michelin star winner opened up his place about a year and a half ago. It's a counter service joint featuring soups & sandwiches.

    Idiots.

    Graham Elliot's joint serves coffee from Metropolis Coffee, a small local roaster.

    Opened on Chicago's north side in 2003, the father & son owned roaster began roasting in their small coffee shop.

    They now have their own roasting facility and count numerous top restaurants among their clients.

    By the time this article was published in 2008, they had won Small Roaster of the Year, employed 24 people and had revenue of $2.5 Million.

    You went back to school to study law in order to change your life. Why does it bother you so much that some people might consider their own options?

    I dropped my car off at the mechanic a little while ago.

    Their hourly labor rate is $99. This place must have six or seven bays, but each one was packed.

    Talked to the manager a bit. His business has never been better. In this poor economy, people are willing to repair their car instead of look for a new one.

    But, he promised me that I'll get my car back before they close. (They're open 'till 8:30.)

    Hey, it's a step up from Subway, and he's charging $10.00 per sandwich.

    He's already planning to open additional locations, so maybe it's not the worst idea ever.

    I had the short rib on opening day and my girlfriend and I split the pastrami reuben and the banh mi (pork belly) on day two. All were delicious and I've heard very good things about the grilled cheese.
