What's for supper tonight?

    Also not fair. It's too hot here for chili. In fact, it's too hot here for much of anything. Why did I move farther south?

    Move west from Austin and it is just cold enough to have things like chili or come work at my paper where the AC continues to blaze night and day and I am wearing a winter coat in the office and even brought a beenie (sp.?) to work.

    The rooms I'm in all day are frigid. I've been wearing a jacket in 90-degree weather, because the building is like a meat locker.

    But I'm ready for it to be cool outside. Last couple of days have been nice, but we're heading back to the 80s (the temp, not some return to the decade...).

    I made chili last night. I forgot how great chili is reheated. By the way.. if you want a good chili recipe, PM me. I made some changes to my old recipe last night and it was amazing.

    Chili (and most soups, frankly) is always better the second day.

    when I cooked in decent restuarants, I'd always make everything but french onion and clam chowder the day before. Just gives everything a chance to settle in.

    My son has a band concert tonight so we're going to eat after. Anyone have a good crock-pot recipe or something else that can cook while we're at the concert?

    Can't go wrong with the classic pot roast in the slow cooker.

    Cut up potatoes, celery, carrots and onion and put them in the bottom. Add some veggie broth from the carton (I don't think there is a good industrial beef broth out there) and throw the roast on top.

    Plug the bad boy in on medium or so (depending on how long you'll be gone).

    Make gravy out of the liquid when you get home, serve the veggies on the side.

    As easy as it gets.

    Yep and if you buy red potatoes you don't even have to cut them up. YOu can put them in, skin and all whole.

    I love to throw a pork tenderloin or two into the crock pot with whichever sauce trips your trigger. My wife usually does this. The best option I've seen is to toss in some sweet BBQ sauce and then throw the meat over Texas toast. But you can use almost any marinade. I've also used jam and fresh fruit in the mixture. Apples are nice. They mix with the pork and sauce to make a tasty surprise.

    And for those chili folks, a few great ways to eat those leftovers is to toss some over shredded lettuce or mix some with macaroni. I've also been known to scoop some into a crock pot with cream cheese to make a nice dip.

    We're doin' burgers tonight. Got 'em marinating in some beer now. I'll fry some bacon and grill some onions and shrooms, to boot.

    It'll be pretty good.

    This is going in the crock pot now. It's on low, as we won't be eating for about 5 hours. And spup, thanks for the red potatoes thought. Less work=happy OTD!

    Heinie, that pork tenderloin sounds pretty good too. I'll keep that in mind for next time.
