What's for supper tonight?

    It doesn't call for any specific beer, just one 12 oz can or bottle. We only had the Leinies or Newcastle in the apartment, and I'll be damned if I'm using Newcastle to make pizza dough. Blue Moon might be good with the orange flavor.

    Since I'm making huevos rancheros for breakfast tomorrow, I made salsa tonight.

    Here's a quick pico recipe for all y'all.

    Two cans diced tomatoes
    1 red onion, minced
    4 cloves garlic, minced
    2 medium cubanelle peppers, minced
    juice and zest of 1 lime
    1/2 bunch cilantro, chopped roughly
    pepper to taste
    splash of oil and vinegar

    Combine all and let sit overnight in the fridge. Adjust for level of spiciness and seasoning.

    Brown a couple tortillas in a skillet. Slather with refried beans and place on a greased cookie sheet into a low oven.

    Fry some eggs sunny side up. Place eggs on tortillas. Top with salsa, some more cilantro and lime if desired and grated manchega or jack cheese. Serve with extra warm tortillas and black coffee.
