About 20 bay scallops, boiled in generous old bay seasoning.

Then placed in a salad with various pepper slices, sun-dried tomatoes, lettuce and onions.

Best egg salad I've ever had is my own. ;D

And the key to using less mayo is using more mustard. I highly recommend the Jack Daniels' brand of honey mustard, along with a little mayo/Miracle Whip, a handful of chopped celery, and salt and pepper to taste. The honey mustard gives it an incredible flavor, sweet and tangy.

Cool, bucky, I might try that. I've never made egg salad, so your recipe would be the first. Although, I might use chopped onions in lieu of celery.

One of these days I'll give you the recipe to the best potato latkes you've ever eaten.

ANY recipe for potato latkes would be the best potato latkes I have ever eaten.

I had Outback for curbside takeaway up on the screen when The Queen called and said she was coming home with crab quiche. Lord did I lose tonight.

I lied. A grilled cheese, some chicken noodle soup and plenty of 12-ounce refreshments.
