    we didn't smoke (meat) back home in the PNW. i've embraced this whole brisket-smokin' concept and am attempting to take it to new heights.

    i tried a cranberry brisket this past weekend. it was good, but is a two-time a year type of meal.

    when i do get back home, i'm going to freak some folks out with my new, improved game.

    I worked at a joint where I smoked all manner of meat, and it's one of my favorite things... ever.

    but by god, it has to be done right. what type of wood did you use and did you use charc.?

    and are you big into rub?

    Rub on the ribs, not on the brisket. No charcoal. Wood was mostly hickory with a mesquite stick or two at times.

    Steak and angel hair pasta...drizzled with a butter garlic sauce. For dessert? Chocolate Chip Cookie Dough cheesecake. It's in the oven now. Oh, and to go with the chocolate theme, the crust is chocolate graham cracker. I'm really excited about it.

    ... and, i just finished off what might have been the best t-bone i've ever eaten. combo grilled/smoked.

    Spup grilled some brats with creamed peas and potatoes on the side.
