Had a pot luck dinner with office compatriots. Chili, pizza, chips, dips, cupcakes ... Oh mylanta!

    Frozen pizza.

Was going to make chicken enchiladas, but since I have to work in two hours, that idea flew out the window. I don't have that sort of energy tonight.

Ham sammich, Santitos chips with salsa and a side of honey-roasted peanuts.

God, I'd kill for a home-cooked meal, right now.

I'm on a diet, so I'm cooking for myself now. But I just made myself a meal fit for a king.

A 1/4 lb shrimp, tossed in a pan and seared with garlic salt, oregano basil and italian seasoning.
A small Ahi Tuna steak from Trader Joes (AMAZING!)
A stalk of broccolli, tossed with the remnants of the Ahi Tuna marinade.
5 pieces of asparagus, tossed with the marinade.
A piece of mediteranean flat bread.
Two tablespoons of Trader Joe's mediterranean hummus. Damn.

All in all, probably about 12 grams of fat and a ton of protein. Yum.

If I didn't hate all things that lived in water, that would sound pretty good to me.

Alternating layers (two each) of thin cut pork loin chops (or fileted boneless chicken), onions, and cream of celery soup, topped with bread crumbs and baked. Served over rice with very cold sliced tomatoes and cucumbers with poppy seed dressing. Almost no work involved and super tasting.
