    at an italian joint in mo'ville. owners from sicily. just had pasta fagioli soup that was tremendous with flava. gonna be knee-deep in lasagne any second.

    How do you cook your stip?

    You can actually make it fairly healthy. What I get isn't great, but it isn't terrible. Congrats on the move, btw.

    ok, fucker, i'll share. i soak my strip in red wine vin. for 24 hours and then (lightly) add soy sauce with six hours remaining.

    six hours later, i fire up the coals, wait 20 minutes and then add four big hunks of mesquite. i shut the grill, wait for the steaks to turn to a nice color, take them off, add a nice smoked bleu cheese sauce to them and then broil 'em for about five minutes, allowing the bleu sauce to slightly crystalize, but not become hard.

    i also fill a shot glass with my favorite Q, warm it, and dip about every fourth to fifth bite.

    Barbecue sauce on a steak?!!!! Fucking heresy.

    If your rub/marinade was good enough, you wouldn't need steak sauce. ;)

    i forgot to mention the rub, and yes a good fucking rub is essential.

    i bought a case of jack stack kc steak rub before i left the MW because they only sell shit rub in the PNW.

    and when you have folks who love you enough to send you pappy's bbq sauce from monahans, texas, you take full advantage.

    fruit (the sweetest strawberries i've ever eaten, blueberries), chicken pot pie, red bull.

    dude, i didn't even learn about real rub until three years ago (see PNW). as far as rub is concerned, i'll admit i'm a rookie ... but i do know what's good rub and what's bad.

    According to the employee handbook, a good rub is when you use your pencil to clean the ketchup off your cubicle. A bad rub is when you fondle the janitor's balls and tell him you'd like to make him your bitch.
