You grilling experts will be appalled at my story of Sunday's dinner. My wife's friends (and, by proxy, my friends, I guess) bought a grill. But they don't use it. Admittedly, the guy is in a wheelchair and has paralysis from his mid-chest down. His wife is clueless.

So my wife tells me a few days ago that they want me to come over and grill. She says they have some chicken and steaks. I told her to make sure it's fresh chicken breast. I just had a feeling. But she didn't bother.

We get there. I pull out recipes for beer margaritas, cream cheese twice-baked potatoes and chile cinammon steak. The chicken is thawing in the fridge. It's in a plastic bag, and it's only partially thawed. The steaks are vacuum-packed and frozen.

So I explained the problem. The lady doesn't get it at all. She says you can throw the steaks on the grill frozen. So I went to the store and bought four big New York strips and three packs of fresh chicken breast.

The chicken was awesome. I made it mesquite with three packs of seasoning mix and some additional seasoning I sprinkled over the top of the meat while it cooked. The steaks were okay, but I probably should have pulled them off the grill a few minutes earlier. The margaritas were great. I've never had them with beer, but I have heard of it before. We tried to make mojitos. Well, Adrian tried. Rather than making a pitcher, she tried to make individual glasses mixed right in the glass. It didn't work out well. But I have some extra limes and mint. I'll make my own later this week.

Nobody's eaten for the past week?

Okay. I have a question. I decided to make my first batch of gumbo. I started off all wrong. Rather than sauteeing the chicken breast, I marinated it with mesquite and put it in a crock pot. It's ready. But it has a mesquite flavor. Will this work for a gumbo? I don't want to make something revolting. I have some sausage to throw in, too. Plus, I have the trinity. I couldn't find any file powder.

Based upon your responses, this might be chicken sandwiches or chicken and rice.

My first gumbo appears to be fairly successful. I wasn't sure on the spices. It probably has a bit too much cayenne pepper. It's also extremely thick. My roux seemed okay, but I believe I'm supposed to cook it longer.

I wish I could help you, but I've never made gumbo. I've made a ton of etouffee, but never gumbo.
