    Ha! I just discovered to my horror this will be my last West Nile. I'm out of Bailey's.

    I'll have to shift to vodka and juice after this one.

    trying to find a good chicken stir-fry recipe. any ideas?

    My first recommendation is to go with a Thai chicken curry recipe. There are tons of them out there. They combine curry, coconut milk, chicken breast and veggies with a few other ingredients. I've had good luck with carrots, squash, snap peas, straw mushrooms and water chestnuts in mine. You can find straw mushrooms in the ethnic food aisle, I believe.

    chicken enchiladas. mmm.
    was going to add sticky rice, but need a good recipe, tommy. have done it before and just doesn't seem to turn out the way I want. am thinking I need to go with chicken broth rather than water, but don't really feel like experimenting tonight. so likely just some white rice ... corn on the cob, too, just because the little one loves that stuff.

    Had ribeyes, salad and garlic mashed taters.

    Tomorrow, I'm debating between fried chicken or lemon-honey glazed roasted chicken.
