What's for supper tonight?

    I went the L.T. route tonight.
    pulled out a can of Chunky's Steak and Potato soup. it hit the spot.

    Potato soup. Since it's finally a little cooler outside (feels like late fall), I added a little bit of extra crushed red pepper. I sampled a couple of bites while perfecting it and mmmmmmmmm, mmmmmmmm!! It's so good.

    I like to make soups and stews in bulk, so made a huge batch of it last night. I have enough for about 10 nights, so my big freezer will be a little more full today.

    I have an amazing potato soup recipe. One that I'd be comfortable enough submitting to one of those home cooking contests on Food Network. It is comfort soup at its finest.

    y'all are making me hungry now talking about potato soup. damn. but yea, that Chunky's Steak and Potato is dang good. give me that, sprinkle some extra pepper in, grab some bread and crackers and yuuuuuuuuuuumy.

    Someone gave me the Magic Bullet Blender for Christmas, so instead of dicing up some ham, the ham was pretty much puree. I like it because it made it more smooth.

    I fry bacon in the bottom of my soup pan, remove the bacon, then I add carrots, celery, onion and potato to the bacon grease. I let the veggies saute in that, then add either 4 or 8 cups of milk (depends on how much I feel like making).

    While the milk is warming, I mix flour (tablespoons = cups of milk) and sour cream.. if I use 8 cups of milk, I use the bigger container of sour cream, if I use 4, the medium size.

    So I mix those together, it makes kind of a paste. You can use an electric mixer if you want to do it quickly or a whisk if you like to have more control. Then I take some warm milk, add it in with the sour cream and mix that.. add all of it back into the soup mixture and either use the whisk or electric hand mixer to thicken up the soup.

    I had a couple beer last night, and a bottle of wine. I'm feeling fantastic this morning.
