What's for supper tonight?

    Figured it was time to revive this, because I just cooked the greatest thing ever. ... We have been on a Mediterranean food kick lately, and I found this recipe for which I had most of the ingredients already in my fridge from a shopping trip over the weekend, so I gave it a try. It is sooooooo good.

    The basics:

    Saute some onion (a large one) in olive oil. I added garlic, because I add garlic to everything.

    After about 5 minutes, I add a healthy dose of dried oregano, a generous amount of cayenne pepper and some trimmed string beans (about a pound). Let the mixture cook for another few minutes, so it absorbs the cayenne and the onions are translucent.

    Add a 24-ounce can of diced tomatoes, a cup of chopped Italian parsley, four good size zucchinis sliced into 1-inch pieces, an equal amount of small red potatoes sliced into 1-inch pieces. Bring the mixture with the tomato juices to a boil, reduce the heat, cover and let it simmer for 45 minutes to an hour.

    Allow it to cool a bit and then serve it with feta cheese sprinkled on top.

    It is sooooooo good and balanced. It all just works so perfectly together. The recipe says you can serve it cold too and it goes well with a crusty French baguette.

    I highly recommend this one. It wasn't hard to make.

    Made chicken fried steak and mashed potatoes tonight.

    They were delicious if I do say so myself.

    A couple of Magic Hat Hefeweizens for desert while planning tomorrow's activities.

    No, actually it's in Moline, Illinois. But I would guess a few Mexican joints are named after the Habanero pepper.

    Hamburger Helper tonight. That's right, Hamburger Helper. Can't remember the last time I had that. Maybe when I was 10. Cautiously optimistic. We'll see. Smells good so far....
