What's for supper tonight?

    A favorite at the Coco household ... Chicken Tetrazini

    Chicken, broccoli, carrots cooked in a skillet with a creamy garlic sause, then poured over pasta.

    I think I gained a couple pounds in one meal!

    After finishing Christmas shopping this afternoon, the wife and I took advantage of the Applebee's 2 for $20 deal. Buffalo chicken wings for starters, then I had riblet basket. Shooters for desert. That was a good meal.

    I may go out for a beer and grab a sandwich. Not sure yet. That's sounding to be a good idea, though.

    Something my grandmother used to make back in that fine German neighborhood of Harper and Cadieux.... I have no idea why, but they've always been called that in our family. Maybe it was because my grandmother was of German descent and it was a recipe handed down...
    Anyway...

    Take about 4-5 slices of bacon, cut them up into 1/2-3/4 inch pieces and cook on medium in a skillet to get the fat down.
    Add about half a chopped yelllow onion and cook them down in the bacon/fat mixture until brown. Don't overcook
    Add carrots -- cut like you would be making carrot sticks -- to the skillet.
    Turn the heat down to medium low; add a couple of tablespoons of water, salt and pepper to taste (maybe half a teaspoon of salt and a quarter for the pepper) and cover. Cook on medium-low for about a half hour or until soft (the carrots will cook down).
    A pound will be enough for 3-4 people; two pounds of carrots for 6-8.
