What's for supper tonight?

    Had some friends over today before I leave.

    I fired up the smoker at about 5 a.m., and at 5:45 I tossed in a chicken, Boston butt and three slabs 'o ribs. Took it all off around 1:30 and chowed down with some slaw, beans and potato salad.

    The leftover desserts are taunting me from the kitchen.

    Tuna croquettes, string beans, French bread, grape juice.

    I made the tuna croquettes really thick this time. Yummy if I do say so myself!

    I've been eating way too much fast food picked up on the way home for dinner lately.

    Last night, however, was chicken gumbo and sliced filet over garlic toast with garlic butter from the local steakhouse. Drink was Red Bull cut with water.

    Need some opinions on this one.

    The Lady Friend and I want to make a grilled cheese sandwich with tomatoes tonight, but can't pinpoint the best cheese or combination of cheeses to use. Cheddar seems like an easy choice, but not sure what else might work. I thought mozzarella, but I don't know what would mix with that or if that would work in this case.

    We'd just fry the tomatoes a bit in some olive oil before putting it on the bread with cheese. Any suggestions?

    BRoth, go to the store and buy some bread with cheese mixed in. For the filling, mozzarella, tomato and basil leaves.
    Pop both pieces of bread onto a pan with butter that is already melted, while the bread is cooking, layer the cheese, tomato and basil. Pop the over piece of bread on top and let the cheese meltdown some by flipping the sandwich over while you start on the over sandwich.

    As for me, made tonight's dinner just a few minutes ago.
    Cooked down some onion, garlic and a little sugar. Added balsamic salad dressing, salt, red chili powder, oregano, basil and a couple of bay leaves. Let it cook until it was almost crusty, that's the sugar. Then added, some left over roasted red peppers, a can of tomato sauce and a can of the cheap Hunt's sauce with about a cup and half of water.
    Let that cook down some more so the water was reduced. Then added about 8 ounces of ricotta cheese and let melt down into the sauce.
    Dropped the heat to as low as it would go and cooked covered for about 30 minutes.
    While that was going, took four smallish chicken breasts, wrapped them in saran wrap and pounded them flat with a rolling pin.
    Dredged them in seasoned flour (salt, pepper, red chili powder and garlic powder), then egg wash and then seasoned flour again. And dropped them in a skillet of hot oil. Cooked them up golden brown and for those scoring at home, I did not nearly set the kitchen on fire as I did in my previous attempt to make something similar.
    Anyhoo, the sauce will get better the longer the day goes.
    When tonight comes, throw some noodles in some hot water. Warm up the sauce and chicken, and feast with some salad and bread.
    I might make some pudding pie -- instant pudding, poured into a pre-made graham cracker crust and top it with whipped cream.

    Made salmon croquettes, mashed potatoes and peas for dinner tonight.

    So yummy!

    Hamburger steaks with gravy and onions, garlic mashed potatoes and creamed corn.

    What say you?
