    Right, the pacakge calls them breast tenderloins, but the package is an idiot.

    OK TBF and others... as I promised, my chili recipe...

    Brown two pounds of ground beef while cooking two small onions and three cloves of garlic (Doesn't have to be the same pan, I just use the same pan because it's easier for me)

    While the meat is draining add to a dutch oven or any large pot...
    one can of tomato sauce
    one can of tomato paste
    one can of stewed tomatos (may slice the tomatos if desired)
    one can of chili beans AND THE JUICE
    one DRAINED can of dark red kidney beans
    .

    Add meat, onions and garlic to chili mix. Ok, here's where it gets fun. Make sure the sauce is only on a low heat. The chili is better hwen it's very slowly simmered and doesn't boil or burn to the bottom of the pan. Once the chili is a little warm (seasoning disolves better in warm liquid)...

    To the mixture, add...
    [/b] one heaping palmful (ala Rachael Ray) of chili powder
    one regular palmful of ground cumin
    half a palmful of garlic powder
    a chili seasoning package (either mild or hot depending on taste) and a few drops of your favorite hot sauce. [/b]

    Trust me, you'll want the seasoning package. Ask Doc; it was phenomenol. It's not overkill. If you like really spicy chili, add a handful of brown sugar to the mix. If you like your chili a little more mild, add two handfuls of brown sugar. Also, add a handful of cheese. Don't add too much, but just enough to bring the chili together a little bit.

    When serving, you may want more cheese on it. You may want crackers on it. A certain member of this board tried to pursuade me to melt some sour cream into it and said it would be amazing. I didn't do it this time, but I might next time. It's an easy recipe and can simmer on a really low heat without needing stirred for a long time. I think I simmered mine for about an hour before Doc got home and we consumed some of it. This recipe also makes at least two days worth of leftovers for two people, less for four depending on portion sizes.

    Two ham sandwiches on whole grain bread and some Pop Tarts. The usual at work.

    The Second Wok special of the evening was red curry chicken with coconut milk and basil leaves. As take-out goes, not tooo shabby.

    MysteryMeat, gotcha.

    As for cooking them:

    2-to-1 mix of flour to corn meal. Lots of salt and pepper in the dredge. Make a buttermilk and egg wash.

    Run the chicken through the wash and then the dredge. Repeat. Fry in oil at 350 and season when you take them out.

    Throw 'em on a sandwich with lettuce, tomato and mayo. Maybe a little ketchup, if ya want.

    Fried goodness.

    Hmmm, I may have to try that over the weekend (I can get more breast strips at Kroger on sale, and I need the flour and cornmeal anyway).

    Oven (gas) doesn't light up and I can never remember to tell the guy who fixes such things for my apartments. Tried to bake a cake, nothing happened so I tried to put it in the toaster oven. Somehow that didn't do the trick.

    So I'm still confused why you don't have flour. It was, however, the first thing I had to buy when I moved in with Doc because he didn't have flour or sugar.
