Maude rhetorically asks if The Dude could imagine where the plot of Bunny and Karl's scene goes:

"He fixes her cable?"

 

Godfather: "We've got newspaper people on the payroll."

 

I don't know how this gem hasn't been mentioned yet from Anchorman:

Ron: Rule No. 1, no touching of the hair or face!

Arturo Mendes (Ben Stiller): Of course ...

 

That one always makes me smile. Hey, they needed to supplement their salaries back then too.

 

I could probably name dozens from this movie. I can think of about four things just from the recording studio scene:
"I was born ready, Nick. Let's go!"
"Do you think the bass is taking away from my vocals."
Watching Reid dance behind Nick while Dirk is singing.
"Nick? Were you rolling on rehearsal?" after they decide to add another bar to "Feel my heat."

Then again, it goes so well with the trousers. Or I could go with the lamb's wool. Then again, you're gonna see a lot of khaki down there.
