Beef vs. pork (vs. chicken)

Memphis vs. Texas vs. Carolina vs. St. Louis

Her question was directed to Sam, who's a Carolina guy. So it's Eastern NC (vinegar) or Western NC (some tomato with the vinegar). I think that's right. Please don't shoot me, I was born in Michigan. Our barbecue sauce came from jars at the grocery store. :D

Eastern, ma'am. No question.

It's pork and vinegar-based, for those following along.

With western NC barbecue, ketchup is added to the sauce.
 
I'm all for an outing - someone has to contact me and say, "I will host in such and such a place." My goal for this year was Denver or Minneapolis. I'm open to anything.
 
I would love to do Denver this summer, too. I'll keep my fingers crossed that a host will miraculously come forward and revitalize the official SJ annual outing.
